Instructions

2. In a large bowl, mix together the currants, sultanas, raisins, and mixed candied peel. Add in the brandy and mix until all the fruit is coated.

3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the treacle.

4. Add the flour, mixed spice, cinnamon and nutmeg and mix together until fully combined. Gradually add the brandy soaked fruit and mix until all the ingredients are combined.

5. Add the orange and lemon zest and stir until fully incorporated. Finally, stir in the flaked almonds and glacé cherries.

6. Transfer the cake mixture into the prepared tin and spread evenly. Bake in the preheated oven for 2-2½ hours or until a skewer inserted comes out clean.

7. Leave the cake to cool in the tin for 10 minutes before turning out onto a cooling rack.
