Ingredients



• 2 cups of all-purpose flour
• 1 teaspoon of baking powder
• ½ teaspoon of baking soda
• ½ teaspoon of ground cinnamon
• ½ teaspoon of ground nutmeg
• ¼ teaspoon of ground cloves
• ½ teaspoon of salt
• 2 eggs
• 1 cup of sugar
• ½ cup of butter, melted
• 1 teaspoon of vanilla extract
• 2 tablespoons of orange juice
• 1 cup of mixed dried fruits (raisins, currants, cranberries, cherries, etc.)
• ½ cup of chopped walnuts
• ½ cup of chopped almonds

Instructions



1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) round cake pan and set aside.

2. In a medium bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Set aside.

3. In a large bowl, beat together the eggs and sugar until light and fluffy. Add the melted butter and mix until combined.

4. Add the vanilla extract and orange juice and mix until combined. Gradually add the dry ingredients and mix until combined.

5. Fold in the mixed dried fruits, walnuts and almonds.

6. Pour the batter into the prepared pan and bake for 50 minutes or until a toothpick inserted into the center of the cake comes out clean.

7. Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
