Ingredients

  • 1 package devil’s food cake mix, plus ingredients needed to make the cake (oil, eggs, etc.)
  • 2 cups heavy cream, divided
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 teaspoon pure vanilla extract
  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Instructions

Make the Cake

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.

Mix the cake mix according to package instructions. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

Make the Ganache

In a medium saucepan, heat 1 cup of the heavy cream until it is just simmering. Add the chocolate chips and let sit for 5 minutes. Stir until the chocolate chips are melted and the mixture is smooth. Remove from the heat and stir in the vanilla. Pour the ganache into a bowl and let cool until it is just warm to the touch.

Make the Mousse

In a medium saucepan, whisk together the remaining 1 cup of heavy cream, sugar, cornstarch, and salt. Heat over medium-high heat, stirring constantly, until the mixture comes to a boil. Boil for 1 minute, then remove from the heat.

In a medium bowl, whisk the eggs until light and fluffy. Slowly pour the hot cream mixture into the eggs, whisking constantly. Pour the mixture back into the saucepan and cook over medium-high heat, stirring constantly, until the mixture thickens and coats the back of a spoon. Remove from the heat and stir in the butter.

Pour the mousse into a bowl and let cool until it is just warm to the touch. Fold in the cooled ganache until the mousse is smooth and evenly colored.

Assemble the Cake

Place the cooled cake onto a serving platter. Cut the cake into two layers and spread the mousse in between the layers. Spread the remaining mousse on the top and sides of the cake. Decorate with fresh fruit, chocolate shavings, or a dusting of powdered sugar, if desired. Serve immediately, or refrigerate until ready to serve.
