Ingredients:

To make this delicious Chocolate Swiss Roll Cake you will need:

  • 3 large eggs
  • 75g caster sugar
  • 75g self-raising flour
  • 25g cocoa powder
  • 3 tablespoons of milk
  • Filling of your choice; jam, cream, buttercream, ice-cream etc.

Instructions:

1. Preheat your oven to 190°C/375°F/Gas Mark 5 and grease and line a Swiss roll tin with greaseproof paper.

2. Separate the eggs and put the yolks into a large bowl. Whisk the egg yolks until they become pale and creamy, then add the sugar and whisk again until the mixture is thick and creamy. This should take around 5 minutes.

3. Sift the flour and cocoa powder into the egg mixture and fold in using a spoon. Finally, add the milk and fold in gently.

4. Whisk the egg whites in a large bowl until they become stiff, but not dry. Gently fold the egg whites into the mixture, being careful not to over mix it. Spoon the mixture into the prepared tin and spread it evenly.

5. Bake in the preheated oven for 10-15 minutes, or until the cake is firm to the touch. Place a piece of greaseproof paper on your work surface and sprinkle some caster sugar over it. Turn the cake out onto the paper, then carefully peel off the paper from the base of the cake.

6. Spread the filling of your choice over the top of the cake, leaving a 1cm border around the edge. Then roll the cake up from one of the short ends and place it onto a plate or serving dish.

7. To finish, dust the cake with some extra caster sugar and enjoy! You can also decorate with some fresh fruit or melted chocolate.
