Healthy Cake Pop Recipe
Ingredients
For this healthy cake pop recipe, you will need 1 ½ cups of white whole wheat flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, ¾ cup of coconut oil, ½ cup of honey, 2 large eggs, 1 teaspoon of vanilla extract, and 1 cup of mashed ripe bananas. You will also need about 1 cup of dark chocolate chips and a handful of crushed almonds for garnish.
Instructions
Begin by preheating your oven to 350 degrees Fahrenheit. In a medium bowl, mix together the flour, baking powder, baking soda, and salt. In a separate large bowl, mix together the coconut oil and honey until combined. Add in the eggs and vanilla and mix until combined. Add in the mashed bananas and mix again until combined. Slowly add in the dry ingredients, mixing until just combined. Do not overmix the batter. Grease a cake pop pan and spoon the batter into each spot. Bake for about 15 minutes or until a toothpick inserted into the center comes out clean. Allow the cake pops to cool before removing from the pan.
Melt the dark chocolate chips in a double boiler or in the microwave. Dip the cooled cake pops into the melted chocolate and then roll into the crushed almonds. Place the cake pops on a baking sheet lined with parchment paper and place in the fridge to allow the chocolate to harden. Enjoy!
