Ingredients

To make a delicious red velvet cake with buttermilk, you will need: 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon cocoa powder, 1 cup vegetable oil, 1 1/2 cups granulated sugar, 2 large eggs, 2 tablespoons red food coloring, 1 teaspoon white vinegar, 1 teaspoon vanilla extract, 1 cup buttermilk, and 1/2 cup chopped pecans or walnuts.

In addition, you will also need: 1 recipe of buttercream frosting, 1/2 cup of softened butter, 2 cups of powdered sugar, 2 teaspoons of vanilla extract, 2 tablespoons of heavy cream, and 1/4 teaspoon of salt.

Instructions

Begin by preheating your oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans. In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder. In a large bowl, combine the oil, sugar, eggs, red food coloring, vinegar, and vanilla extract. Beat with a hand mixer until light and fluffy. Gradually add in the dry ingredients and mix until combined. Slowly pour in the buttermilk and mix until just combined. Gently fold in the pecans or walnuts.

Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Once cool, level the cakes by cutting off the rounded tops.

To make the buttercream frosting, combine the softened butter, powdered sugar, vanilla extract, heavy cream, and salt in a large bowl. Beat with a hand mixer until light and fluffy. Spread a thin layer of frosting on the top of one of the cake layers and top with the other layer. Spread the remaining frosting on top of the cake and sprinkle with extra chopped nuts, if desired.
