  • 2 large eggs, at room temperature

  • 1 cup whole milk, at room temperature

For the frosting, you will need:

  • 3/4 cup unsalted butter, at room temperature
  • 3-4 cups confectioners' sugar
  • 1/2 teaspoon pure vanilla extract
  • 2-3 tablespoons whole milk, at room temperature

Instructions

Making the Cake Layers

Preheat oven to 350 degrees F. Grease and flour two 8-inch round cake pans. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl as needed. Add the vanilla extract and mix until combined.

With the mixer on low speed, add the dry ingredients in three additions, alternating with the milk in two additions, beginning and ending with the dry ingredients. Mix until just combined.

Divide the batter evenly between the prepared pans and spread into an even layer. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.

Making the Frosting

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and 3 cups of confectioners' sugar until light and fluffy, about 3-4 minutes. Add the vanilla extract and mix until combined.

With the mixer on low speed, add the remaining confectioners' sugar 1 cup at a time until desired sweetness is reached. Add the milk 1 tablespoon at a time until desired consistency is reached.

To assemble the cake, place one of the cooled cake layers onto a plate or cake stand. Spread a generous layer of frosting over the top of the cake. Place the second cake layer on top and spread a thin layer of frosting over the top and sides of the cake. Use the remaining frosting to pipe decorations onto the top and sides of the cake.
