Ingredients
For the cake:
- 2 cups all-purpose flour

- 1 (15-ounce) can pure pumpkin puree
- 1 cup chopped pecans, divided
For the caramel sauce:
- 1/2 cup packed light brown sugar
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1/2 teaspoon pure vanilla extract
- 1/4 teaspoon salt
Instructions
For the cake:
Preheat oven to 350°F. Grease and flour a 9-inch round cake pan. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves and salt. Set aside. In a large bowl, using an electric mixer, beat together the sugars, oil, eggs and vanilla until smooth. Add the pumpkin puree and mix until combined. Slowly add the dry ingredients and mix until just combined. Fold in 1/2 cup of the pecans.
Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the caramel sauce:
In a medium saucepan over medium heat, whisk together the brown sugar, cream, butter, vanilla and salt. Bring to a low boil and let cook for 3-4 minutes, stirring occasionally. Remove from heat and let cool slightly before pouring over the cooled cake. Sprinkle with remaining 1/2 cup of pecans.
