Ingredients

  • 2 1/2 cups all-purpose flour

  • 2 cups granulated sugar
  • 2 tablespoons cornstarch
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

Making the Crepes



In a large bowl, whisk together the flour, eggs, salt, milk, vegetable oil and vanilla extract until smooth. Heat a non-stick skillet or crepe pan over medium-high heat and brush with a little melted butter. Pour about 1/4 cup of the crepe batter into the skillet and swirl the pan to evenly coat the bottom. Cook until the crepe is golden and lightly crisp on the edges, about 2 minutes. Flip the crepe and cook for an additional 1 minute. Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes on top of each other.

Making the Filling



In a medium saucepan, whisk together the sugar, cornstarch, flour, heavy cream and vanilla extract. Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes. Remove from heat and let cool.

Assembling the Cake



Place one crepe on a serving platter. Spread about 1/4 cup of the custard filling over the crepe and top with another crepe. Continue layering the crepes and custard until all of the crepes are used. Refrigerate the cake for at least 1 hour before serving.
