Ingredients

  • 4 eggs, separated
  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup butter, melted and cooled
  • 1/2 cup finely chopped pecans
  • 2 tablespoons cocoa powder
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raspberry jam

Instructions

Cake

Preheat the oven to 350°F. Grease and flour a 15x10-inch jelly roll pan. Line the bottom of the pan with parchment paper and grease the paper. Set aside.

In a medium bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add 1/4 cup of the sugar and continue beating until stiff peaks form. Set aside.

In a large bowl, beat the egg yolks with an electric mixer until thick and lemon-colored. Gradually add the remaining 1/2 cup sugar and continue beating until thick. Beat in the flour, vanilla, and salt. Beat in the melted butter. Fold in the egg whites and the pecans.

Spread the batter evenly into the prepared pan. Bake for 15 minutes or until the cake is golden brown and springs back when lightly touched. Cool in the pan on a wire rack.

Filling

In a medium bowl, beat the cream until soft peaks form. Add the powdered sugar and cinnamon and continue beating until stiff peaks form. Set aside.

In a small bowl, combine the cocoa powder and 2 tablespoons of water until a smooth paste forms. Spread the paste evenly over the cooled cake. Spread the raspberry jam on top of the cocoa paste. Spread the cream mixture over the jam.

Assemble

Using a sharp knife, cut the cake into 3-inch-wide strips lengthwise. Starting at one end, roll the strips up into a log. Place the log onto a serving plate. Sprinkle with powdered sugar to serve.
